I am moving in exactly 1 week and what am I doing?? Blogging and cooking dinner. I'm just not in the mood to pack, this weekend I'll do it (yeah, right!) Anywho, I've started this whole "eating healthy" thing again like I did my senior year of college (1 year ago) and lost a ton of weight so here I go again after 6 months of marriage.... dieting. I feel like I'm starving. I started the 3 day diet (google it!) and supposedly you lose up to 10 pds in 3 days. We shall see.
Tonight I'm trying something a little bit different for dinner, mind I already had my grilled chicken salad but this is for my man. I bought a Jambalaya rice a while back when it was on sale so I decided tonight to try it. Right now i'm boiling stew beef in tomato sauce and diced tomatoes with a little salt and pepper. Once that is done I'm going to cook up the rice and hopefully throw the beef in it. Taylor loves rice and I had the meat already in the freezer so why not try it, sure is simple. Of course i'll make him a salad with a few pepperonis on it.
Tomorrow is my last day with my children i've been taking care of all summer, i'll be sad but it only means school is about to begin and routine is in order! I can't believe i'll be 23 in less than 2 weeks...ugh, I feel 16 again.
Here's to making it through the night without a snack--I wish I had a girls group that worked out together and held each other accountable. Miss that part of college life for sure! I always had someone to do it with me or work out....

Vacation is OVER
Well, after 9 days of vacation and eating out.... I've had my fair share of food! So what does that mean?! Lettuce, grapes, shakes, and specialK is my new eating plan. After a while you just can't take it any longer.
I've failed on the recipes, I haven't been home to cook up anything. I did work on my classroom yesterday and it made me sooo happy! I'm so excited about this year. It's already looking so awesome (thanks to my hubby!)
I've got so much to do, not to mention we move next Wednesday and I haven't started packing. Thank goodness our washer and dryer sold.
I've been watching kids all summer and I only have three days left, they have been so fun (maybe a handful) but so precious. I'm going to miss them for sure. This summer has been eventful. The Lord always meets my needs even when I don't deserve it. Thankful for his provision. Now if Taylor could find something we would be on track!
I'm not going to lie, going on my 2nd year of eating dinner alone wasn't my first choice for being a newlywed but I've made it... And hopefully not for much longer!
Enough rambling, the power is out and I have a freezer full of meat. Praying it doesn't ruin! Enjoy your Tuesday Friends!

Once again..
So I've been a little slack the past few days, haven't had time to think about much of anything, I've been way too exhausted. For instance, thinking about moving in 3 weeks, vacation on Sunday, trying to get everything together for my new class, and working everyday is a little much for this brain of mine. My new class is going to look fabulous, I have everything purchased just waiting to get in... which was suppose to be 3 weeks ago!
Any who, I went to check out our newly painted apartment and MAN do I have some organizing to do, its about 40 square foot smaller and the storage is--nonexistent. I'm a little concerned. Yes, its a one bedroom but its cute and cheap plus its our first place together... not just some place Taylor moved into after we were married. The biggest downside: no pantry for my monthly supply of food. This could be interesting.
I still can't believe i'm on my 2nd year of teaching, married, moved away, and that my family is sooo far away. I HATE not being able to see my parents/sisters on the weekends much less every 6 months, that's just wrong! But its life and I can see why the Lord moved me here. My class consists of a group of very diverse students, the kinds of kids I always wanted to go over seas and work with... Isn't the Lord funny, he didn't send me overseas, he sent me to downtown Spartanburg. The mission field is right in my hands and your hands, just look around. Sometimes I feel like "I can't do this!" but I do it and look back in amazement.
The funny thing about marriage is that you learn something new about each other more often than you anticipate. Its challenging, fun, exciting, and you learn to love the things that get on your nerves. (I've rambled enough)
Tonight I made breakfast, only because I had sausage that needed to be eaten before we leave for vacation. We wanted hash browns but didn't feel like waiting forever...so I looked in the freezer and pulled out a bag of tater tots and the recipe is as follows:
While the biscuits are cooking I stuck the tator tots (not many because you will mash them up) in the oven as well. I let them unthaw and then poured them into a small frying pan, mashed them up, and let cook with a little canola oil (less fattening if you just spray the pan), i put a little salt, pepper, and let them cook until you like them (crunchy, mushy). Add cheese, bacon (I know fattening!) and let cook until melted. There ya have it! Delicious and easy.

Not Today...
Well, dinner was going to be wonderful, until I forgot to put it in the crockpot this morning, then Taylor forgot to put it on before he left for work... so I had a coupon for a delicious pizza and cheese bread from Tony's which I grabbed after I went to Aldi and Walmart.
Today had to be the longest day, definitely had 2 cups of coffee this morning but after dinner I crashed for two hours. Felt like a school day, not looking forward to the exhaustion it brings!
Here is the pork chop recipe just in case you want to try to tomorrow.
1 can of cream of chicken
pork chops
1 ranch packet
Put all the ingredients in a gallon size zip lock bag, mix in the bag and let sit overnight or 4-6 hours. Put in the crock pot and cook for 4 hours. (less if they are thin pork chops) and add water as needed.
I found thin sliced boneless pork chops on sale at Ingles, so here is to a cheap dinner!

Weekend Fun
Such an eventful weekend... Left for Charleston with Taylor's mom and sisters at 6:30am on Friday and returned midnight that night. Fast but nice trip i'd say. I missed my precious husband so I drove back to Greenville instead of staying in Pageland. Pathetic? nahhh, I just like being with him. Especially on the weekends!
Today I hit some major sales in the grocery department. Bi-Lo had sooo many things b1g1 that I couldn't resist. I love the feeling of saving a ton of money and stocking up! My bill was $81 and some change but with my coupon and bonus card it came to a total of $50! I was ecstatic. I pretty much buy anything that is b1g1 (if it is a good deal) and then I won't have to buy it for at least another 1-2 months. Things like dishwasher soap, baggies, rice, toilet paper, paper towels...you know the essentials!
I made our menu for the month, THAT is a TASK! I sit down and write down the days we will be home and then the meals that we want to have. I don't necessarily stick to it, but at least I have that many meals planned out and bought. I stocked up on chicken and hamburger meat last week when it was b1g1 so it made this pay check a little easier.

School Crafts/Tonights dinner!
I've been searching for a cheap way to take the roll...well I've found it. I went to the dollar tree today and found two round pizza pans and with a few items I had at home already I was able to make this awesome board! I put a little magnetic strip behind each number to make it stick. Check it out! Magnetic Lunch Board I just used my hot glue gun, nothing else was needed.
I have a super delicious restaurant anyone in the Greer/Greenville area need to check out for lunch! MiMi's Japanese Steakhouse in Greer is delicious! Its in downtown Greer, 6.95 for lunch portion chicken or shrimp, cook in front of you, AND its enough food to take home for dinner! My lovely friend Kelsey took me there today and I was so stoked because of the prices!
Also, anyone getting married or needing wedding/ribbon/craft supplies needs to go visit Wilsons (five and dime) in Greer. Super great prices on ribbon.
Tonight is breakfast night in the Vanderlip house. We are having biscuits and gravy, hash brown casserole, and eggs. (Fattening right?!)
New hash brown casserole recipe for you to try!
1 8oz sour cream
2 cups shredded cheese
bacon bits
1 package ranch dip ( just go ahead and stock up on these at ALDI, CHEAP! Don't waste your money on the Hidden Valley packets in Walmart or Bi-Lo)
1 bag of shredded hash browns
Combine first 4 ingredients, mix in the hash browns ( I mix it all in the same pan i'm cooking in) bake at 400 degrees for 45-60 minutes.
Now, this is enough for 2-4 people. Double it for a bigger family. Honestly, I use real potatoes if i'm out of shredded and sometimes i'll put in cream cheese instead of sour cream... You can add/subtract what you wish.

Its Pizza Night!
Today was a fun day, my dear friend Andrea and I went to IKEA to snatch some deals for our classrooms.... I came home with more things for my house- go figure! My lovely sister was able to come up, always so comforting to see my sissy... Miss her so much. Life sure does change when you grow up!
I picked up Madison, Taylor's sister on the way home. She is spending the week with us... Lots of fun things planned, which brings me to dinner....
PIZZA!
Easy recipe you would love:
Can of crescent rolls, mozzarella cheese, pepperoni, pizza sauce (optional).
Take your crescent rolls and stuff with the pepperoni and cheese and a little pizza sauce and throw in the oven and cook until the rolls are lightly brown. Such a delicious and cheap appetizer or meal for 2.
Now, if you are feeling adventurous, I always make homemade pizza. Very simple and its quite the favorite around the Vanderlip house. I buy the Jiffy pizza crust, 2 bags of mozzerella cheese, pepperoni, and pizza sauce. You won't use all the pizza sauce so put in a container and save in the frig for next time. Follow the directions on the back of the box for the pizza dough. Spread it out in two pans, I use square cookie sheets (SPRAY IT!) Use flour to keep the dough from sticking to your hands. Once you have spread out the dough, cook in the oven until crust is lightly brown. Take it out and top with sauce, pepperoni, and cheese. Stick back in the oven until cheese is melted.
As Taylor says, "Add this to the weekly favorite!". Honestly, I'm not that good of a cook, but I love to try new things, I read the directions, and take risks!
